A green onion drying machine dries green onions by moving washed, cut slices through a heated tunnel on a stainless steel mesh belt. Controlled hot air passes through the onion layer from above and below, removing moisture in stages at 50–65°C. The whole process takes 1–3 hours and reduces moisture from 90% down to 5–8% while keeping the bright green color that buyers pay for.
Below is the complete step-by-step process, from fresh harvest to packaged dried green onion flakes.
Why Green Onions Need Controlled Drying?
Fresh green onions contain 89–92% water. They wilt within days, and any delay in processing leads to rot. Dried green onion flakes are a core ingredient for instant noodles, seasoning, and food-service industry, but only when they keep two things:
- Bright green color — yellow-brown flakes sell at a 30–50% discount
- Pungent onion aroma — overheating destroys the volatile compounds responsible
Traditional sun drying cannot control temperature, so color and aroma are lost. An industrial green onion dryer fixes this with precise zone control.
How Does a Green Onion Drying Machine Dry Green Onions?
Step 1: Washing the Fresh Green Onions
The process starts with cleaning. Fresh green onions pass through a bubble washing machine to remove soil, sand, and field debris. Roots and damaged tips are trimmed.
Clean raw material matters because any dirt dried onto the surface stays on the finished flake and fails export inspection.
Step 2: Cutting to Uniform Size
Washed onions are cut into 3–10 mm rings or slices by a vegetable cutter. Uniform thickness is critical:
- Slices that are too thick dry slowly and may stay wet inside
- Slices that are too thin dry too fast and lose color
- Mixed sizes produce uneven moisture in the same batch
After cutting, a vibrating dewatering screen shakes off surface water. Less surface water means a shorter pre-drying stage and lower energy use.
Step 3: Automatic Feeding onto the Mesh Belt
Cut green onions are fed onto the stainless steel mesh belt at a uniform layer thickness of 10–25 mm. An automatic vibrating feeder spreads the slices evenly across the belt width.
This step decides drying uniformity. A piled-up layer blocks airflow, and the onions at the bottom stay wet while the top over-dries.
Step 4: Multi-Zone Hot-Air Drying
This is the core of the green onion drying process. The belt carries onions slowly through four independent temperature zones inside the sealed tunnel:
| Zone | Temperature | What Happens |
|---|---|---|
| Zone 1 | 50–55°C | Surface water evaporates gently without shocking the tissue |
| Zone 2 | 60–65°C | Main dehydration — most internal moisture migrates out |
| Zone 3 | 55–60°C | Deep drying continues while chlorophyll is protected |
| Zone 4 | 45–50°C | Cooling and internal moisture balance before discharge |
High-volume fans push heated air through the onion layer from above and below at every zone. Exhaust fans continuously remove humid air, keeping the drying gradient strong.
The critical rule: temperature must stay below 70°C. Above this point, chlorophyll breaks down, the flakes turn yellow-brown, and the aroma volatilizes. The PLC controller holds each zone within ±1°C of the set value, which is exactly what a spring onion drying machine can do but sun drying never can.
Step 5: Cooling and Discharge
After the final zone, the dried flakes pass through a cooling section. Cooling matters for two reasons:
- Warm flakes continue to lose moisture in storage and create condensation inside bags
- Cooling lets internal moisture redistribute, so the final reading is accurate
Dried green onion flakes exit continuously into collection bins at 5–8% moisture, ready for sorting.
Step 6: Sorting and Packaging
Operators or optical sorters remove discolored or oversized pieces. Qualified flakes go into moisture-proof sealed bags, often with oxygen absorbers. Properly dried and packed green onion flakes store for 12–18 months without losing color or aroma.
What Makes the Belt Dryer Right for Green Onions?
A scallion drying machine built on the mesh belt principle offers four advantages for this product specifically:
- Thin-layer drying: Onion slices are delicate and need airflow around every piece. The mesh belt provides exactly that.
- Short drying time: 1–3 hours vs 2–5 days for sun drying, so aroma loss is minimal.
- Continuous operation: Fresh harvest is processed the same day, with no overnight spoilage.
- Zero weather risk: The enclosed tunnel runs in any season, rain or shine.
Common Green Onion Drying Mistakes to Avoid
- Drying above 70°C: The fastest way to turn premium flakes into discount product.
- Thick, uneven cutting: Creates wet cores that mold inside sealed bags.
- Overloading the belt: Blocks airflow and doubles drying time.
- Skipping the dewatering screen: Wastes 20–30% of heating energy on surface water.
- Packing while warm: Causes condensation and mold during transport.
